Recipe for Rumbledthumps-- this is a Scottish recipe

1 Pound potatoes, peeled and cut into chunks 
1 Pound cabbage, shredded (I sometime use the bagged kind usually by the salad mixes in the produce department)
6 Tablespoons butter
1 Onion, I use Vidalia or a Sweet Onion
3/4 cup shredded sharp cheddar cheese
3 oz. cream cheese
1/4 cup milk or half and half cream
salt and freshly ground pepper to taste

Preheat oven to 400 degrees
Peel and cut potatoes into chunks. Cover with salted water in saucepan. Bring to boil, then reduce heat to simmer 15-20 minutes or till done. Drain and mash with 2 Tablespoons butter, 1/2 cup of cheese, cream cheese and milk. Transfer to casserole dish.
Meanwhile, melt 4 Tablespoons butter in large skillet over medium-high heat. Add the cabbage and onion and saute until they wilt, about 20-25 minutes. Put on top of potato mixture in casserole dish.
Sprinkle with remaining cheese.
Bake for about 15-20 minutes. Serve immediately

-Bacon (As much as you'd like)(Thick cut works best)
-Brown sugar
-Maple syrup
-King's Hawaiian Rolls

Pre-heat oven to 350F
Lay the bacon out one by one on a baking sheet.
Rub a good amount of brown sugar on them.
Pour a bit of syrup on them as well.
Bake for 10 minutes.
Flip the bacon, reapply brown sugar and syrup.
Bake for another 5-8 minutes.

Cut the rolls in half.
Make sandwiches with the bacon.

Eat.
Thank me later.
